What’s cooking? Cilantro Lime Quinoa, more like a version of upma with a handful of spices and veggies to bring in some colours + good vibes to this plate of deliciousness 😍 Honestly quinoa never got as much love from hubs when I started making it but playing around with little ingredients helped. Now not only does it add variety to my weekly menu but is happily relished as well 🥳 A purée of cilantro, lime juice for an extra tart and a hint of sugar to balance out the flavours, turned out to be a game changer in this recipe 😊

Main ingredients
1 cup quinoa rinsed, 2 cups water
1/2 cup cilantro, 2 green chillies, handful of spinach, juice of 1/2 lime, 1/2 tbsp sugar, 1/4 cup water puréed together
Veggies of choice – I used onion, carrots, corn

In a pan add 2 tbsp oil, once warm add 1 tsp mustard seeds, let it crackle – add 1/2 tsp cumin seeds, 2 dry red chillies, pinch of heeng let splutter but not burnt- add chopped onions, sauté for a minute – add chopped carrots, sauté for a minute – add cilantro purée, mix well and cook for 2 mins – add rinsed drained quinoa and combine with veggies, let it cook fir a minute – add water, 2-3 tbsp lime juice, 1 tsp salt, 1 tbsp sugar bring to a boil – cover the pan and let simmer for 15 mins – open the lid, add frozen corn & gently mix, cover the pan give it another 5 mins or until water is dry and quinoa is soft. Ready. Garnish with cilantro, peanuts for an extra crunch
