As a kid I was invited to some of my mom’s friends house and she had prepared lauki/soreykai/bottlegourd sabzi which was something that I disliked till such a extent that I never ate till yesterday 🤣As a friend was visiting Indian store,I requested to shop some typical Indian vegetables for us and he got us two big bottlegourd🤦♀️I was so upset Damn!!Now I had to do something,and so a dear friend suggested lauki kofta and that sounded something relieving.Trust me my whole perception about lauki/soreykai/bottlegourd changed😂If anyone has similar experience of not liking this vegetable please try this and you’ll eventually love it!
5.Red chilli powder-1/2tsp
9.Oil for shallow fry
1.Chopped onion- 1 cup
2.Chopped tomatoes-1.5 cup
4.Ginger garlic paste- 1tsp
5.Cumin powder-1 tsp
6.Red chilli powder-1 tsp
12.Salt as per taste
1.Peel skin and grate lauki/soreykai/bottlegourd.Add little salt and keep aside for 5 mins,once it gets watery squeeze out all the excess water thoroughly(keep aside the water to add later while cooking)To the dry lauki add all the ingredients required for kofta and mix well. Make small balls and golden fry in oil on medium heat.
2.For gravy, heat ghee/oil add cumin,cashews,onions and ginger garlic paste and saute till onions are tender.Add tomatoes an rest of the gravy ingredients except kasturi methi, garam masala and cook for 5-8 mins till the tomatoes are soft and mashy.Cool the mixture and grind into fine paste using the stored lauki water.
3.Add another tsp of ghee/oil in the same pan and pour the grinded paste, add kasturi methi,garam masala and water If needed and cook for another 2 minutes.Garnish with coriander,you can add the koftas in the gravy or serve separately.Relish the lauki kofta with rice,naan!
