What’s cooking? Veggies and Egg Skillet 😍 A quick, delicious and easy to make breakfast/brunch idea, we relished it over the weekend and were soooo full both in our hearts and stomach 🥰 A hearty meal – cooked veggies, flavoured with a handful of spices and herbs, layered with eggs and finished with avocado and jalapeño 🤤 Super satisfying and a perfect way to use up all the veggies lying in the refrigerator 😎

Chop veggies of choice – I used chopped onion, carrot, zucchini, tomatoes, green + red bell peppers, spinach.

In a pan add 1 1/2 tbsp Oil/butter- sauté onions for a minute, add Serrano peppers/green chillies, zucchini + carrots, cook for a minute and add tomatoes, green + red bell peppers, cook for another minute and add 2 tbsp salsa (optional) add salt, pepper, red chilli powder/flakes, dry herbs of choice – make spots for eggs, crack eggs and drop on top of the veggies, cover the plan and let cook on low medium heat for 10 mins. Cook more if you like your eggs well cooked like mine cos I don’t like runny eggs 😊
