Veg Pulao loaded with some colours, flavours and goodness 😍 When we talk about comfort meals rice definitely makes it to top favourites ❤️ Pulao is a satisfying dish made with basmati rice, veggies, herbs and spices 🤤 Makes a perfect meal pleasing both to eyes and stomach, best when accompanied with a few mandatory additions like yogurt or raita and pickle 😍

Add veggies of choice, tofu or soy nuggets for some protein and relish all the flavours. Check recipe and ingredients below for my delicious version of Pulao both using Instant pot and pressure cooker 😊

Link in bio Serves 3 : Wash 1 1/2 cup rice and soak in enough water for 15-20 mins – meanwhile in an Instant pot or pressure cooker- sauté mode add 1 1/2 tbsp oil/ghee, once hot add 3 cloves, 1/2 inch cinnamon stick, 1/2 black cardamom, 2 dry red chillies – add 1 tsp cumin seeds let splutter but not burnt – Add 1/2 large or 1 medium onion thin sliced and let it cook until dark brown about 6-7 mins stirring in between – this step will give your rice a nice brown color, the more burnt onions you have the more natural brown your rice will be. Drain water from rice and add to the pot, toss with onions and let cook for 2 mins, add frozen or fresh veggies – carrots peas corn beans, combine with rice- add a little more than 2 1/2 cups water, 1 1/2 tsp salt and mix- pressure cook in IP for 5 mins natural release pressure OR 2 whistles in a cooker, let pressure release for 5 mins and then quick pressure release. Ready 💕 Prick with a fork to check texture.
