What is your favourite thing to make with potatoes? Potatoes often come to rescue when you can’t think of what to cook, simply cos they work so well when paired with most of the veggies or can even be eaten alone 🤓 One of my most loved dish is this very simple and flavorful aloo sabzi, a favourite of all times 😍 The one full of love, comfort and reminds of home 🥰

Tangy Tamatar Aloo Sabzi aka potatoes in a spicy tomato gravy 🤤 few simple steps to follow This delicious + super easy to make and no onion, no garlic curry can be relished while fasting or simply be enjoyed with chapati/parantha/puri totally depending on your food mood 😁 I happily call this sabzi Puri wale Aloo and takes be back to my Sunday mornings at home with family, indulging in hot fluffy puris along with this sabzi 🥰

Recipe 🔽
Blend together 2 tomatoes, 1 green chilli , 1/2 inch ginger, a little water. In a pan take oil – once warm add 1 tsp cumin seeds, a pinch of heeng – let splutter but not burnt – add puréed mixture, mix well – let cook until it thickens and reduces to a thick masala about 15 mins, keep stirring in between – add salt, pepper, red chilli powder, turmeric and combine, let cook until masala releases oil – add 2 cups water, 1 tsp amchur – bring to a boil – add boiled and mashed 4 potatoes, combine with gravy, let simmer for 3-4 mins on medium heat to allow it to thicken. Manage water as per desired consistency, you can add a spoonful of mango pickle to bring in an extra kick of flavours, lastly cilantro 😊
