Wanting to give your plain rice a little flavour twist within 5 minutes? Well this definitely is one of my most favourite ways to treat my taste buds cos it’s comforting, delicious and super easy to make 🤩

What’s cooking? Lemon Rice 💛 Use up leftover plain rice or wait for a while to cool down your freshly cooked plain rice 😈 Tadka of a few essentials that never disappoints and always adds magic be it rice, seviyan or upma🤓 The first time I ever made lemon rice was with help from @hebbars.kitchen and have stuck to the recipe ever since, works as a charm 😍

Recipe
In a pan heat 2 tbsp oil, once hot add 1 tsp mustard seeds, 1 tsp cumin seeds, let splutter – heat on low add 1/2 tbsp chana dal, 1/2 tbsp urad dal, 2-3 dry red chilli, 8-9 curry leaves, pinch of heeng – toss it for 15 seconds – add 1 tbsp finely chopped ginger, 2 chopped green chillies – cook for 30 seconds stirring don’t let it burn- add 1 tsp salt, 1 tsp turmeric powder – mix well, for about 15 seconds you’ll see it bubbling when mixed with oil – add rice (4 cups cooked or 1 1/2 cup measured before cooking) 3 tbsp lemon juice, combine well with spices until well coated – add roasted cashews (nuts of choice) finish with cilantro 💚
